TOFU WITH SMOKED TROUT IN A SPOON
4 teaspoons soy sauce
4 teaspoons mirin (sweet rice wine)
1 teaspoon peeled and grated fresh ginger
16 pieces of organic, soft tofu, cut approximately 1 X 1 X 1 inch.
4 teaspoons thinly sliced scallion, white and green parts
Smoked trout strips
Combine and soy sauce and mirin and bring to a light boil on high heat. Take off the heat and add in the ginger. Refrigerate, let it cool completely.
Put one piece of tofu in each spoon and pour about a ½ teaspoon of sauce on top of the tofu. Sprinkle with scallion and top with a small slice of smoked trout.
Makes 16 pieces.
Sauce can be refrigerated up to 3 hours. Canned smoked trout works equally well if you can’t get smoked trout from your farmer’s market.
